Holiday Food

I´m a horrible blogger- shoot me! Seriously though, I´ve been taking a break....I´m still taking a break...I really don´t have a lot to say right now but I wanted to share with you a chicken salad I made while we were on vacation in the Canary Islands. Yeah.....we had a wonderful time....


We rented a luxury home which was really lovely. Although next time I go back to the Canary Islands I want to stay in Puerto Mogan, this was my favourite place. The beach above is from Puerto Mogan. They call Puerto Mogan little Venice with it´s canals and special architecture.



The home we rented had a wonderful kitchen which was pretty good equipped, for someone like me who spends a lot of time in the kitchen there was a LOT missing, however for the average Joe it would have been just fine. I managed to make quite a few good meals while we were here which saved us a lot of money. Four of us could eat out for around 90 Euro but if we bought the food ourselves and took it home we could buy at least a couple meals, as well as a lot of non-alcoholic and alcoholic drinks and snacks for around 90 Euro. Definitely money to be saved by making your own meals and my family said my food was often better then what we ate out, so that encouraged me even more to continue making food even while I was on vacation ;-)

Toward the end of our trip we needed to use up some ingredients we had bought. We had some chicken breasts, some onion, tomatoes, red pepper, and one carrot (I had to buy the carrot it was the fattest biggest carrot I had seen!) I chopped all of these things up along with some garlic and some fresh coriander and lightly fried everything in a pan. In a bowl I mixed together one tube of Mill´s mayonnaise (a Norwegian mayonnaise) about 1tbsp (SS) of mustard and about 1 tbsp (SS) of curry powder. I added the veggies and chicken and voila....a super yummy, super easy chicken salad which was so good I still think of it and we´ve been home over a week now!


Since it was one of the last evenings we didn´t want to buy a lot of new ingredients but some salad leaves would have been perfect with this. However, what we did have was a package of tortillas and some shredded cheese so we made wraps with that and the chicken salad...


A good healthy meal like this gives you energy to do crazy things like this....

There is so much going on right now in my little life so I apologize for the quietness in my blog. For those of you loyal souls still following, I send you big warm hugs! I had great plans to come back with a whole new layout and lots of bells and whistles...but I just haven´t gotten time to make the comeback I want yet but I HAD to share this salad with you, it´s so good and so easy, you just have to try it!!! 

I promise to come back soon and share all the exciting and boring things happening and perhaps there will be a new layout eventually also. Thanks again for sticking with me my friends....
