Salmon and Chili Shrimp

It´s been a busy week but I´ve been sticking to my new "lifestyle" and I feel really motivated. Everything is going really well. Even my tupperware party was a success with healthy serving instead of cakes. I served a lovely fruit salad with apples, pears, walnuts, and vanilla kesam (When I looked up what Kesam is called in English this is what Wikpedia came up with. I never knew it was a cheese. I always thought it was a sour cream type...because what I use has a sour cream consistency...but ok...) you also use cinnamon in this fruit salad and it´s just so good!! 
Last night was my first Saturday where I was going to try and enjoy a little extra without that meaning a bunch of candy, chips, and yummy baked goods. I bought a bag with only a few pieces of gummy candies in it...seriously not more then 8 pieces. It was the lightest candy bag I´ve ever taken up to the cash register...so I was pleased. I also bought some nuts and chocolate and raisin mix but only had a few bites of this, the rest is stored for next time I feel I MUST have something. We also put out some veggies and low cal dip. So I was really pleased. We did buy a pizza on our way home, two actually. A large and a medium. The medium wasn´t touched. So next time we´ll just get a large. Plus we had 2 pieces of the large left. So this was my Saturday night and I´m proud of myself. Even though I ate some things I won´t normally eat on a week night I had MUCH less then normal and I didn´t feel I was missing out on anything. 


I´ve also been walking every day since Tuesday and my legs feel like Barbie´s must when someone moves them so much, you know that sound of plastic rubbing against plastic...wish I could make the sound for you but use your imaginations...anyhoo...my legs feel like someone has done really horrible things to them right where they connect with the rest of my body, but otherwise I feel great. I´m sleeping like a rock at night and I´ve checked my weight twice now since I began ( I know I shouldn´t...once a week is my goal...just needed to make sure I was on the right track) and slowly but surely it´s going down. Only a few hundred grams at a time but it´s ok- it´s going down and I´m satisfied with how I´m doing things...so that is all positive. 


Tonight we followed a recipe I found on a Norwegian newspaper online. You can see the original recipe HERE. For my English readers this is what I did, in a nutshell:


Finely chop two garlic cloves. Put one garlic clove in a little bowl and save it for later and put the other in a little sauce pan. Next finely chop one whole chili (removing seeds) and put together with the garlic in the little bowl. Grate lime peel into your little sauce pan with the garlic and then once you´ve grated the whole thing, cut it in half and squeeze out all the juice into the sauce pan. Add one box of crème fraiche. (about 2deciliters) 2tsp corn flour, salt and pepper and warm up slowly. Stirring often. In a frying pan, pour about 1tbsp vegetable oil and add the chili and garlic. Add about 200-300 grams of peeled and rinsed shrimp. I used shrimp that was in a box with liquid and even though I emptied the liquid, there was still lots of liquid while this was frying...so I got more cooked rather then fried shrimp and garlic and chili. Set the shrimp, chili, and garlic aside and fry up your salmon filets about 2 minutes on each side. Or do like I did and just let them sit under a lid for about 5 minutes. Serve with a fresh salad (I used baby greens, carrots, sun dried tomatoes and a little shredded cheese) and some pasta. Place the filet on the plate, add shrimp, chili, and garlic, sauce, salad, and pasta and voila...
This was really good even though mine doesn´t look like the photo in the recipe...If you´re looking for a great fish dinner, this is definitely worth trying! The best part also was that when I was done with my dinner, I was still a little hungry. There was no more fish though but there was some shrimp, salad, and pasta. So I put together a little salad and it was SO good! Guess what I´m having for lunch tomorrow! 


I´m looking forward to another motivational week. I´ll try and be better about blogging, but really wanted to get into this new lifestyle and give it a great kick off.
