Dinner At My House

Thought I’d share dinner with you all….I’m extremely tired of the regular food we’ve been eating, so I’m on a quest to find new things to eat. I came across a blog, not completely sure which one it was, but they had a recipe for fish tacos. This intrigued me as we live in Norway where there is an abundance of fish, the whole family loves fish AND tacos, and the cherry on top- fish is healthy for you!!!!

I didn’t have several of the ingrediants that were called for in the recipe I saw online, so I decided to wing it…make up my own and just see how it went. I told the kids if it tasted like crap we’d cook up some pasta and have that for dinner.

I started by making an Amy’s version of a simple coleslaw..

I used cabbage sliced very thin and red onion, mixed half box of sour cream (1/2 cup) and equal amount mayonaise (I actually used Remulade but not everyone can get this so you can use mayonaise also) fresh ground garlic and black crushed pepper. Blended this all together and you get a simple coleslaw.

I warmed up some soft taco shells and put some coleslaw, corn niblets, shredded cheese, and salsa down the middle then topped it with some pieces of flakey yummy cod fish. You can use any fish you’d like though I’d assume…remember we’re winging this folks…I seasoned the Cod with oil and fajita seasoning which I had left over from a previous dinner a few nights ago…go with me on this one- remember I’m making it up as I go…but it works…really!

Roll and eat- couldn’t be easier!! And the consensus here was overwhelming- everyone loved the fish tacos! Although some people griped a bit about finding a fish bone or two in what was suppose to be a bone free filet..we won’t mention names though….

Yeah, I had been taking pictures of the dinner and then brought the camera to the table…probably shouldn’t have done that, my kids go all crazy like when they see a camera pointed at them…

Generally though they like being photographed and everyone takes turns photographing each other…makes dinner time so much more fun!!!

(Julia’s freezing, the Captain’s been gone a whole day now and no one was home today to burn in the wood ovens, so it’s a bit nippy in here…but nothing a good blanket can’t help and maybe if she would put a sweater on instead of just a t-shirt she wouldn’t be so cold….right Sarah??

Oh, looks like he’s busy too eating up his mamma’s first go round with fish tacos….I guess we’ll leave them to finish their meal in peace…I’ll be back with more recipes to share with you all when I invent them or borrow them….In the meantime I have a question for you- what is your favourite fish dish?

Amy - your post on my blog was so warm and sweet - Tusen Hjertilig takk! Would love to see pictures of the sweater you made. ;-) The fish tacos look so yummy; the combination of homemade coleslaw and corn sounds so good. My favorite fish recipe is "Roasted Pecan and Herb-Crusted Salmon". It's layered in a pan - the bottom layer is tomatoes, onions, peppers and fennel, next comes the salmon; it's rubbed with the fennel fronds, basil, mustard, salt and pepper. Then drizzled with white wine and lemon juice. Toasted pecans mixed with melted butter are pressed on top of each filet then bake for 15-17 minutes. Delicious. We make it every Valentine's Day during our annual ice-fishing trip. We fish for trout so it is used instead of salmon in the recipe. Norsk for trout is ørret perhaps?

Does fish and chips count as a fish dish? Hehe. If it does, it just may be my favorite.

I loved a summery pasta dish we had at work last summer...a creamy white wine sauce, prawns, asparagus with fresh pasta! To die for! (I know it's not fish, just wanted to share anyway!)
