Do You Hear Angels Singing?

Today I got an email from my dad with a link to this song…

Think of your mother when you hear this…” is all the email said…

Admittedly this was difficult to listen too as it still hurts so much that mom is gone…but when it was done I continued to listen to other songs by this amazing group and I began to hear angels singing….do you hear them?

Happy 101

Check it out- another award!!!! This one was given to me by the very sweet Marilyn over at Bestas Hus- if you haven’t checked out her blog then I highly recommend you do it. She was born in the USA and has lived in Norway such a long time you’d never guess she was American unless you read carefully!!! hahahaha! Really great gal, so go check out her blog!

Ok, as with the majority of awards there are things you must do when you accept them and in this case- it’s to tell you 10 things that make me happy. This shouldn’t be too hard- should it?

1. My family- both here and in the USA- Love you guys and you’re my best friends in the whole world!!

2. My dogs- with seven of you now in my home- you HAVE to be a happy point or I’d go crazy…

3. My dear good friends who I treasure..I have a lot of very nice acquaintences..but few truly good friends and those closest to me know (hopefully) how much I love and respect them and how happy I am that they are in my life.

4. Cooking and baking make me happy- even though they make my arse huge- I still love them…and watching people eat what I make makes me even happier- maybe that should have been number 5?

5. Children’s laughter makes me happy- when you watch a child truly laugh from the gut…you can’t do anything else but laugh with them…it’s one of the greatest sounds on earth…

6. Taking photos of the beautiful nature around me, my kids, and my animals and my hunky sailor..yeah…taking photos in general makes me happy- even though I’m not a pro, I’ve caught a moment in time- a memory I can look back on after it’s passed and that makes me happy.

7. Entertaining guests…whether they overnight or just come for a day…I love to make people feel welcome here, serve them good food and sit around and talk and laugh together..or just be…if they are here many days you can’t keep the entertainment level high, so it’s good when you have people you can just be with…that makes me happy too.

8. Travelling makes me happy, though I do it so seldom…I love being annoymous in a place and wandering around discovering new things..I wouldn’t be happy just lying on a beach somewhere, I want to see things and do things on vacation..that makes me happy.

9. Accomplishing something I didn’t think I could do makes me happy. It’s almost an exhilerating feeling to do something I’m just sure I can’t and when I do I just want to shout…WOOO HOOOOO!!!

10. Appreciating each of the four seasons and what they give us make me happy…though when they last longer then I expect I might be a little annoyed…but hey…I’d say this is a fine happy point to end with..flowers in springtime, sunshine on your face in the summer, the gorgeous colours of fall, and the snowy quiet magic of winter…

Now, you might have read 7 dogs in the house…yes, you read correctly. Unfortunately Redman was returned to us by the woman who co-owned him with me. I did everything I could to convince them to keep him, even telling them we’d get out of the co-ownership agreement and let them have him without any extra charge (they paid half price for him with this agreement) but she insisted they were going to return him. According to her there was no problem with the dog, it was the agreement she didn’t like, having to have such close contact with us as a co-ownership agreement requires was not to her liking. This is why we offered to get out of the co-ownership and just let her keep him free of charge since they kept professing their love for him and how much they didn’t want to give him up and he can’t be used in breeding so it was just as well he stay with his family then be moved around. However, I got a text message saying she had been in a mind frame to return him the last couple days so she was sticking with that. At that point I realized she just didn’t want him anymore and it was nothing I had done or the dog had done. So Redman is here…looking for a forever home AGAIN. He’s such a sweet guy, but this next home will be his 3 home in just 9 months and I’m hoping 3rd time is the charm. It’s been my fault, I’ve been too trusting and people will say what they can to get a half price dog or free dog and I believed them. I hate feeling like I have to be so skeptic to people but I feel I have too now- the next home will really have to prove they are the right home- not sure how yet, but I can’t put this poor guy through this one more time. He deserves a loving family like his brothers and sister have. If anyone in Norway knows of someone who is looking for a hiking partner, someone to train obedience with, go tracking with, swim with in the summer and share a bed with…ok ok…you don’t really have to share a bed with him…hahahaha..if you know of anyone who could be a possible forever home for Redman let me know- I believe my email address is under my profile. If not leave a comment with how I can get hold of you and I will. Redman is the “runt” of the litter but he is still a beautiful beautiful dog who will make a fantastic family pet with the right people.

Misha over at From My Front Porch In The Mountains has a slew of sweet animals to keep her happy but I’m sure she has some other great things that keep her smiling..

And finally…Lisa over at Little To Big, a fellow American who has made the leap to Scandinavia and is living only a short 30 minute drive away and I still haven’t met her yet…shame on me!!! Yeah yeah…you know me, the hermit in the woods with her pack of dogs…all she does is bake all day and walk dogs…such is life…hahahaha…

A Naked Dog In The Middle Of Winter?

My lioness, Birdy, must think she lives in the tropics because she is losing her coat BIG TIME.

Thankfully none of the other dogs are losing their coat- at least not like Birdy…..or I’d need some more bags!!! Say, anybody know of a good wool spinner out there who could spin this wool into yarn for me? I’ve seen Leonberger wool spun and used and it’s gorgeous!!!! The colour is so warm and the fur is also, I believe you mix it with a little sheep wool or other types of wool- I don’t know- I don’t knit, I don’t spin…I just brush and collect!

The children are making good use of the winter weather and entertaining themselves to no end…I’ve borrowed this video Sarah took of her brother and sister yesterday…don’t worry folks…he’s ok…

As for me, I prefer to stay in and make yummy soups and then share the recipe with you all…such as this cream of chicken soup which is easy and YUMMY….

About 4-500 grams of chicken breast cut into small strips

300 grams of mushrooms chopped finely

2 TBSP butter (or margarine)

1-2 small onions cut up finely

6TBSP lemon juice

2,25dl water

2TBSP dry Timian or 4TBSP fresh

4dl Chicken stock

4dl Heavy Cream

Salt and Pepper to taste.

Basically you’ll lightly fry up the chicken first and set it aside- sautee the onion and mushrooms in the butter or margarine- then add the rest of the ingredients- buzz a couple times with a standing mixer until the soup is mostly in a purreed consistence. Add chicken in the end and serve with a good bread. At our house we always add a touch of dog hair…we find it gives our food that little something extra you don’t get anywhere else- (at least those places that don’t have a dog themselves)

I Smell Something Fishy….

HI!!! I’m back!! Terribly sorry I have to ditch out on you like that sometimes, but the life of a seaman’s wife is not always bon bons and blogs….I have a full schedule and some weeks/days seem busier then others and this week I’ve been busy.. There is so much that has happened that I’m not sure where to begin but I thought I’d share with you my day yesterday which I found to be extremely interesting.

The Norwegian government has a program called Fiskesprell which involves trying to get children in kindergardens and elementary schools to eat more fish. The thought behind it is if you can get children started early eating fish they’ll live a healthier lifestyle and hopefully live longer!

The wonderful thing with children is that they are so accepting and open to anything- however, over time, the world around children, parents, siblings, etc, have such an impact on what a child will continue to be open and accepting too. If a family is not use to eating fish the child will eventually dislike it also even if they’ve never tried it! That is why it is so important to be open to new things when you have children or work with children.

At our kindergarden the children often eat Mackrell in tomato sauce..

I’ve tried both and have to say I’m a bigger fan of the Mackrell in tomato sauce then the Caviar, but it wasn’t BAD either..just not something I’d rush out and buy again. The kids love both of these items and it’s funny on days when the kids are getting oatmeal instead of bread and different things to have on their bread, they always look at me because I bring a box of Mackrell to work every day and I had one little boy who asked me if I was going to eat all the Mackrell. I told him I’d eat my three KnekkebrĂžd (breakable bread from Wasa) and I’ve found if you pile the right amount on each of these breads you get about three from a box of Mackrell- so he kept watching me and kept saying, “Are you going to have SO much on your bread?!” hahahaha….So they love this fish food and we’ve been encouraged to serve even more. Here in Norway we have fish cakes- which is basically fish ground up with maybe some onion, chives, pepper, and salt and a little milk and egg to bind the fish and then you fry them in a pan- they are wonderful and you can use almost any fish. These are great on bread or by themselves. And the fish cake recipie is very giving, you can add and subtract items as you like and it usually works just fine.

I made “Fiskegrateng” which is basically fish and macaroni in a white sauce with bread crumbs- it’s so easy peasy and served with a light salad of shredded carrots in a vinagerette it’s so yummy! I even made my own white sauce this time and if I can do this you can do this! Here is the easy peasy recipe:

Cook up about 100 grams of Macaroni or 1-2 dl (I doubled this recipe) in lightly salted water.

Cook up about 500 grams of fish (I used Seth or Sei in Norwegian but you can make this with any fish)

To make the white sauce, you’ll need the following:

2 TBSP (SS) margarine – let this melt

add 2TBSP (SS) flour – mix well so there isn’t clumps and begin to add milk, stirring constantly. You’re going to add a total of about 4dl of milk (again I doubled this recipe- it’s forgiving also, so you can add and subtract as you like pretty much)

Stir constantly as the sauce cooks up, add some nutmeg (about 1/2 tsp) and salt and pepper to taste..once the sauce has thickened you add the cooked pasta and fish and mix well, add three eggs (I just cracked three eggs and dumped them in- the single recipe calls for three eggs and as I said I doubled the recipe but I didn’t add six eggs and it still worked) Mix the eggs into the mixture well and then pour into a baking dish and top with bread crumbs. This is a Norwegian recipe and the Norwegian cuisine doesn’t use a lot of spices but you could absolutely add some if you want on your bread crumbs- I think a little lemon pepper would be lovely on this. Bake at about 350F (180C) for about 40 minutes.

Serve with about 4-5 carrots shredded mixed with 1/2dl water, 2tbsp vinegar, 2tbsp sugar- mix well and let this sit a little.

I’m really excited about seeing how we can introduce more fish into the kindergarden and getting kids excited about eating fish and seafood. My kids were lucky growing up on the coast of Norway, our previous home had a boat house and dock and they were often out there fishing from the dock and whatever they caught they disected, nothing was more interesting then seeing what was in the fish’s belly! I was totally grossed out by this but I didn’t grow up along the coast so I wasn’t use to this!!! My kids didn’t think anything of this!

It’s snowing like crazy today and so I’ve begun the process of making FenalĂ„r with one of the legs to the lamb I ordered from our friends. I got a box with various lamb parts and there were two legs. The one leg I’ll keep for a nice steak and the other I’m making a traditional salted meat here in Norway which is called FenalĂ„r. Looks like this when it’s done

This salted meat is wonderful with a yummy potato salad and a Norwegian flat bread or just eating by itself! The meat is going to rest in a bed of salt for 14 days and then I’ll hang it up for 2 months…I’ll take pictures along the way, though I forgot to photograph it before it went into the bed of salt- so I’ll take photos when I take it out of the bed of salt and hang it up! I’m really excited to try doing this- this is traditional Norwegian food and I think it’s fun to try something new and yet so traditional!

Now, onto something a little sad- I’ve lost a follower! Uff…I’m really sorry again that I disappeared for a week, I should have given notice, that would have been the polite thing to do, but I still don’t think my disappearance warranted losing a follower- do you??? It’s funny how you can get hooked up on the numbers when you have a follower log! Sure hope whoever left will give me a second chance and if you’re reading this blog for the first time or you’ve been here before but not added yourself as a follower- please do! I Fell In Love…

I’ve been missing in action the last days, my friends who have my female puppy living with them were here Friday night and spent the night until Saturday. We went to a dog show on Saturday so that was the occasion. It’s always great to see them, they are such lovely people and Shakira is absolutely gorgeous and so well rounded- a very sweet puppy who reflects the love she is shown in her home. This makes me so happy. We had a great time together Friday evening, I had made quiche and a salad and some garlic bread and we finished the night with a small glass….or two….of liquor (Dooley’s…mmmmm) before heading to bed. The next day we went to the show which was an hour and a half away with Nanna and Shakira. Shakira won her class and was best in opposite against the male who won his class. So we were so proud of her! Nanna on the other hand got a nice critique but was told to go home and lose weight!!! The judge said she loved her face but that her weight was ruining her movement and we needed to work on that and she would be perfect! Hmmm…so now Isabella, Nanna, and I will be working on our weight so our movement will be better…certainly don’t want gorgeous gals with bad movement now do we?

A Girl And Her Dog

I wasn’t going to blog today…didn’t feel for it today- sorry folks…but then these lovely photos came into my inbox and I had to share…I just loved them…

I love how these photos display a bond, love, and loyalty between two friends..what lucky girls they are to have each other! This is my female Shakira whom I have living with this lovely family and their daughter has taken an active role in training Shakira for shows and regular obedience and you can see how wonderful their relationship is. We’ve been so lucky to have this wonderful family come into our lives via Shakira!

I believe strongly children should have pets growing up. It teaches them to care for something living besides themselves..it’s the parents responsibility to see that the child lives up to the job but I think it’s a wonderful way to teach children compassion for other living creatures. My kids have had fur between their fingers since they were born and I wouldn’t have had it any other way. They gripe about having to help with the dogs now..but they love them and care about them and I believe they will always have at least one dog in their lives- most likely they will be more sensible then their mother and not have five or six but most likely one and I’m a very happy mamma about this…:-))

Antiques Roadshow…

I love antiques. I love things with history and things that belonged to another generation. A perfect Sunday would be a lovely breakfast and an antique auction..even if I don’t buy anything, watching people get excited over an item is fascinating for me and fun..I try and guess if they are keeping the item for themselves or buying it for re-sale. It’s always exciting and if you have a great auctioneer it’s even more fun.

I also love the Antiques Roadshow. It’s so great to try and guess the value of a piece and find out how far off I am. I also love to see the faces of people who do not realize what they have and then to find out that what they have is something so special..like this video for example- I LOVE this guy’s reaction…

And check this out…who would have guessed…I guess Jade can be appreciated by some people, I liked the bowl the most but the rest of it was maybe not my style…so who would have guessed the value of this stuff??

I missed the last auction in our area but will be keeping my eyes pierced for the next one..haven’t been in a long while and I’m feeling a strong yearning for a laid back Sunday at the auction house…

Where do you suppose these antique appraisers learn what is what? What kind of education do they have you suppose? That has always been a big question for me, where do they learn what is a keeper and what isn’t and all the info they come with is amazing!

Today’s Lunch

I just love this little plant…it was one of my purchases yesterday..decided my place needs a little bit of colour…and this was sweet..

Haven’t seen my deer friend (hahaha…no pun intended) today but this little guy has been greatful for the bread..

Wish I could tell you what kind of bird this is and if anyone knows, leave it in the comments if you’d like…but he was pretty and very active- flying back and forth to the bread and the tree…I guess he enjoys a good rye bread!

As for myself and my lunch today I decided to use my Focaccia bread mix from MĂžllerens today and I made focaccia bread in my wood oven..

I only put rosmary and sea salt on mine but you can add black olives to this as well…I have kids in the house so black olives will have to wait until they move out…this was still great though and I made myself a sandwich of rocket lettuce (ruccola salat), red onion, blue cheese, a type of parma ham (spekeskinke), and cherry tomatoes. YUM….

I spoil myself….it’s good! We should all spoil ourselves when we get the chance! This afternoon I’ll head out into the white flurries and take the lionesses and our little lion king for a walk..hopefully with my darling children along with me. Tonight is my turn to drive Julia and her friends to gymnastics…it’s just an ordinary day in little ol’ Norway….

This Is Everyday Stuff For Me….

I’ve been in doubt if I should share this with you or not…I mean…I’ve never seen anyone blog a photo of a messy room before…let alone a bedroom and I’ll probably turn the stomach of a bunch of people who aren’t dog lovers..or maybe are but have some sort of self control when it comes to the four legged babies…but this is good ol’ Amy’s blog and this is my life…the good, the bad, and the ugly…

Last night I went to go to bed and saw this..

I’d get screamed at by the little guy if he knew I was showing you photos of him sleeping in my bed…he’s soon 12 and has a rep to protect…NO ONE is to know he still sleeps with mom when Dad is out at sea…so let’s keep this between us ok? And then there is Nanna sound asleep next to Thomas and Isabella keeping my side warm…isn’t she sweet?? Yeah folks…you can see why I don’t blog about interior…just not happening at my place…but it’s ok..I’m happiest this way…

I couldn’t understand why he stood there so long and he was eating something- again I had no clue what but he stood a long while…when Sarah came home I told her about this and she said she had dumped old bread over there and that is what he was eating…*BLING* lightbulb just came on in my head…I was going to start feeding the little guy and see if we can’t become friends!!!

Isn’t that a great idea??? So today I bought two bags of carrots and took more old rye bread out to him and put it in a big pile…was hoping the puppies wouldn’t find it while they were out running around and so far so good…

After corebar I ran some errands and then got home just as Julia came in from her ski trip with Bently and Jenny and Birdy. She changed dogs (Birdy for Nanna) and was heading out for round two when Thomas asked to join her. They went skiing and Sarah and I went with Birdy and Isabella for a long walk…I sent my sister a birthday present and my sister in law, both have birthdays coming up. I usually don’t send packages to my sister, I order online through amazon or something but wanted to get her something and wrap it and send it…however after paying almost 450kroner in postage (that would be about 70 bucks for you in the USA) I came to the conclusion that it would be awhile before I sent something from here again…rather use that money on a better gift from Amazon or something…hahaha..I’d love to hear where you shop online- can anyone point me in the direction of any great online shops?? Doesn’t have to be Amazon type..I love the quirky and unique..so if you know of someplace great leave the link with your comment ok? THANKS!!
