After the fish course I was at for work I’ve been inspired to see where I can add fish or seafood in our daily meals. As part of our staff meeting at work my bosses wanted me and the other woman who was at the course to come up with some tasty samples of fish dishes in a way of encouraging and inspiring the others to try adding fish in their daily meals as well.
One dish I came up with which was particularly popular was this seafood salad. In Norway they sell a lot of mayonaise based salads intended for use on bread. Norwegians eat a lot of open face sandwiches. Stig loves a shrimp salad which in my opinion looks like pink marshmallow fluff with some shrimp pieces in it…YUCK. So I started thinking, how hard can this be? Since I had a budget to hold myself within I bought crabsticks but of course if you can get hold of fresh REAL crab meat this salad will be a million times better. However, have no fear if you’re on a budget like me this tastes just as yummy with these fake crab sticks!! Also substituting the tiny shrimp for scampi would be grea too, but this works just fine!
Amy’s Scrumptious Seafood Salad
Y’all know me, everything here can be played with according to your own taste buds- so have fun with this…
2 packages of crabsticks, broken up and shredded
1 big box of peeled shrimp (I used first price here in Norway)
1 giant carrot shredded
2-3 spring onions (vårløk) finely chopped
half of a red, yellow, or orange pepper- finely chopped
2 packages of Remulade which is kinda similar to a tartar sauce I think..it’s a mayonaise with pickle and onion and other spices…
Mix this and add some garlic pepper to taste- chill and serve. You can serve this with crackers (I use Salinas crackers here in Norway) or you can stuff this in a flour tortilla like me..I LOVE stuffing tortillas with all kinds of stuff, easy to take with, you don’t make a mess and you get nice and stuffed!!
This is extremely simple but you can dress it up for a luncheon with some nice salad greens or served with some sliced fruit…Let me know if you try this and what you think and remember you can totally play with this recipe- want more seafood- add whatever you like! Same with veggies, this is SO good!
It’s been a hard week since mamma Heidi left us…thank you all for your condolences…even though there are still six dogs in the house we notice she isn’t here anymore…it’s weird to leave the front door open and she isn’t trotting out to join us…but it will get easier with time I’m sure. My mom has been on my mind a lot lately and I guess that is normal also considering we just went through another loss and those kinds of things will always bring me back to losing my mom which has been the biggest loss in my life.
I talked Stig into making some long line leashes for us to use with the two young boys so we can work on recall. I had bought a long line leash at the pet store which is this thin neon yellow plastic coating over a very thin rope and attached to it is a clasp probably intended for a cocker spaniel or something…not a giant mountain dog like a Leo. I had asked the woman at the pet store if there wasn’t anything stronger and she began to instruct me on how I could go to the Biltema (a car parts shop here in Norway which sells a little of this and a little of that) and buy different clasps and so on, so I thought to myself, I’m going to pay 200 kroner for this and then go buy new parts for it??? Hmmmm…..
So Stig and I bought some boat rope which holds up to 1500 kilograms (we have a little to go on with those numbers- even with 6 leos- hahahaha) and some heavy duty clasps and voila…my Captain and all knowing knot maker managed to whip up this for me..
We got 30 meters of rope so we have now 2x 15 meter long line leashes which is more then enough to let these guys think they are off leash and work on calling them into us when we want them. You still have to hold on tight if they see something they want to go after- and it’s best with gloves when walking with this so you don’t get rope burns…but this is strong- they aren’t going anywhere as long as you can hold on!! hahahaha!
Friday we took Nanna to the vet in Gjøvik to check her hips and eyes and elbows and her lungs after she was sick a month ago with what the vets at another clinic believed to be a lung infection. Her lungs were excellent, he said they looked like she had indeed had a lung infection and been under treatment for that but it was looking great and nothing to worry about. Her hips and eyes were also excellent but her right elbow will recieve a weak grade when it is sent in to the Norwegian Kennel Club. It was nothing serious and very minimal, but enough opening that it wouldn’t be free. This has nothing to do with her life quality so we are greatful this was the only “problem”. This is also something that is allowed to breed on within our club as long as the partner is free in their elbows- so we now have a third breeding female here- HURRAY! She just needs a red ribbon at a show after she has turned 2 and we’re good to go. She has even lost 2 kilos since her last visit to the vet, so she is now 58kilos! WAHOOOO!!!!
We stopped in at McDonalds and celebrated that weight loss by getting her a 10 kroner cheeseburger and while we were airing her we noticed these guys sitting by a river…
This doesn’t even show half the birds that were there, but they could care less about us, even big ol’ Nanna didn’t faze them…they just sat there grooming themselves and keeping warm….hey- maybe they were frozen???? hahahaha…I tried taking several photos and couldn’t understand why my button would go down- “change battery pack” my sweet little camera said…..UGH!!!!
Last night Stig and I attended a party here in the, “bygda” or village, we live in. Was over 400 people there and a lot of familiar faces..we were served dinner first which was veal, veggies, potatoes and a sauce..it was good, but cold. Then they pushed tables to the sides and brought out a band and everyone let go and had a rip roaring good time. I stayed in control of my drinking so today wouldn’t be a waste- some delightful red wine and a cider later in the evening and I was done and quite pleased with the night. The Captain however was a naughty boy and mixed red wine, akavitt (A Norwegian vodka of sorts…not really sure how to describe it, but it is strong and not to my taste)- yeah….he’s moving in slow motion today! But we had fun and the people in this area are so friendly and have really taken to us so it was a lot of fun with many overly friendly Norwegians who all of a sudden had enough alcohol in them that they were ready to practice their English with me! hahahaha!
Another busy week lies ahead will update as I can my friends….until next time….

Fi, of course it's great she is healthy in general- but since I have a kennel, it's good to know I have another girl I can continue my breeding with!! :-))
Marilyn, they are very well behaved when it suits them and I'm fairly strong on most days! :-) Hahaha! My boys will be around 75 kilos when they are grown! OUCH!
the salad looks delish and it sounds like a great party!
I make a similar seafood salad, but have never tried it with carrots... great idea! The only thing is I cannot get the imitation crab sticks in DK! I have looked ALLLLL over for them... but will keep looking!
