Doesn’t that just put a smile on your face?? Two lion cubs lying at my doorstep…yep, put a big smile on my face!! Smiles are good and healthy…so glad I could assist by supplying something healthy for your day….
Now, here comes something unhealthy but just as good…you see, I had gone to one of the foreign shops here where they sell all kinds of things you can’t buy in regular shops and I got hold of four sweet potatoes. I have seen scrumptious recipes for sweet potatoes and thought I was going to try them someday myself…well, I got these and they sat in my fridge forever…and things get lost in my fridge so I was afraid this was going to happen to these when I finally found a recipe to try….Sweet Potato Bread…yes folks it’s good…dang good…
This little baby isn’t for daily consumption as the amount of sugar in it would give ya sugar shock big time- especially when you double or triple the recipe as I did yesterday the sugar amounts make you think, “Em…that’s a lot of sugar!!!” I’m sure someone might be able to switch out honey for the sugar or something to make it healthier but I’m not very good at that, I am pretty much a follower of recipes until I get so good at them that I start to dare to play a little with them. But this could easily be a Saturday treat so get your pens out and write down this recipe- you won’t be sorry I promise and it’s one of those easy peasy recipes, pretty much throw it all into a bowl and mix…and then into some greased bread pans and bake…you can’t get much easier unless you’re using one of those cake mixes where you just add water and egg…and this is a million times better.
Sweet Potato Bread – 1 Loaf
1 1/2 C white sugar
1/2c oil
2 eggs
1 3/4 c flour
1tsp baking soda
1/4tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
(ok ok, I played A LITTLE around with this and added 1tsp all spice because I didn’t know if I was translating the correct spices..so I just added some all spice also and it worked great)
1/3c water
1C mashed sweet potato (my four sweet potatoes made exactly enough for three batches of this stuff..)
1/2C Pecan nuts (oops…I forgot this part..hahahaha..but definitely add it, sounds good)
Combine sugar and oil, add eggs and beat. Combine flour, baking soda, salt, cinnamon, nutmeg and alternate between adding this to the egg mixture and the water..or just dump it all in together and mix like I do…:-)) Stir in the potatoes and pour into greased 9x5 bread pan and bake at 350F (180C) for 1 hour (watch this though, my bread burnt a little in the back) you should be able to stick a knife in and have it come out clean and your bread is done.
Voila folks…yummy yummy in your tummy…and a lifetime on your arse if you don’t have any other hobbies then baking…hahahahaha… speaking of getting other hobbies then baking- because I am trying to do that- today the kids and I are going to run into Hamar quickly while the fur babies are sleeping and look for some outdoorsy clothing which will keep us nice and toasty dry while out and about with the lion pack. Oh yes, there is sunshine today but the sun is here so little it’s better to invest in the type of clothing that keeps you dry rather then cool- so we will be looking for that today…Hope you have a wonderful day folks and enjoy the baking!!! This sounds great, I think that I have a recipe for sweet potato biscuits and they are wonderful. I will give your recipe a try soon, maybe after the heat wave breaks though.....
